Today, over 100 aromatic profiles exist.\u003c\/p\u003e\n\u003cp\u003eThe most distinctive characteristic of this cultivar is in its name. Though this tea tastes as if it were scented with summer jasmine flowers, it isn’t. The sweet jasmine fragrance comes solely from its leaves and skilled processing that accentuates that scent.\u003c\/p\u003e\n\u003cp\u003eThe source garden is over a century old, and the particular plants that produced this tea are over 80 years old. These older trees have deep root structures that allow the plant to absorb more complex nutrients, while the garden’s higher elevation climate slows leaf development. And we finally found it, just 1.5 hours drive southwest of Wuyishan proper.\u003c\/p\u003e\n\n\u003cp\u003eThis tea was crafted by a grower and maker who has deep experience with yancha oolongs from growing through roasting. Rougui carries an innate fruitiness to its leaves that shines through both light and dark roasts. We chose the latter, more traditional style, candying those flavors through rounds of high-heat charcoal roasts. We then let the tea set for a year’s time, allowing the tang of the charcoal to mellow, and redolent notes of aged balsamic, sticky longan fruit, and rich propolis to come to the forefront.\u003c\/p\u003e\n\n\u003cp\u003eClassic Rougui retains all the concentrated qualities of a tea grown in Wuyishan preserve, and is, in a word, a wild tea. Buddha’s Hand is so named for its unusually large leaves which, when harvested, can span the length of a person’s hand. Originally from Fujian’s Yong Chun County, cuttings arrived in Taiwan along with Han settlers who planted these trees on Wenshan, one of earliest tea-producing regions on the island, just east of present-day Taipei.\u003c\/p\u003e\n\n\u003cp\u003eWenshan has since succumbed to urban sprawl, and few tea gardens remain in the area. Indeed, the garden where this Aged Buddha’s Hand was harvested and crafted is now gone, the family relocating to Alishan where they continue to produce our current Buddha’s Hand and Ruby oolongs. This Aged Buddha’s Hand differs from its modern counterpart in its distinct twisted-leaf style, an older oolong craftsmanship method that has fallen to the wayside in favor of the rolled or pearled style.\u003c\/p\u003e\n\n\u003cp\u003eAged Buddha’s Hand is arrestingly aromatic, much like the current harvests, with a rich, chocolate black brew. The differences lie in the decades of undisturbed aging, that have rounded the texture of the tea, deepening the flavors and unearthing layers of complexity. While there’s always room for surprises along the way, our intention with this April 23 oolong harvest was to produce a tea with emphatic fragrance, sweetness, and clarity.\u003c\/p\u003e\n\n\u003cp\u003ePicked in the early hours of morning from a hillside garden approximately 1300m up Shan Lin Xi, this tea was crafted at the source garden, eliminating time spent in transportation to an offsite production facility, and any premature oxidation of the leaves en route. This quick turnaround from bush to sun withering helps maintain the light, floral qualities of these leaves, and slow, temperature-controlled indoor oxidation concentrates the sweet notes of the tea.\u003c\/p\u003e\n\n\u003cp\u003ePrior to kill green, the leaves are tossed in large bamboo drums to lightly bruise and further oxidize. It’s at this stage in the process that smell becomes very important. After withering, bruising, and further resting, the leaves become increasingly aromatic. Kill green, stopping the oxidation by heating in rotating drum roasters, is done as soon as the leaves take on the scent of orchid flowers, a harbinger of the aromatics and flavor profile of the finished tea.\u003c\/p\u003e\n\n\u003cp\u003eRolled into tight pearls, then rested for a week’s time, the final step of the finishing process is a light charcoal bake that sets the leaves, and concentrates the plant’s innate sugars. What was intended as one tea became two: and Gold is the lighter of the two.\u003c\/p\u003e\n\u003cp\u003eUnlike last year’s harvest, the morning these leaves were picked dawned clear and bright, allowing us to process the leaves in the early morning sunshine. In the initial withering period, direct sunlight draws forth a specific floral aroma from tea leaves that’s absent in shade withered teas. It’s these chance variables that provide an unexpected and delight nuance to tea making from year to year - and sets this year’s tea apart from its 2023 counterpart.\u003c\/p\u003e\n\u003cp\u003eAfter sun withering and hours of oxidation inside temperature-controlled rooms, these leaves are tossed in large bamboo drums to lightly bruise and further oxidize the tea. During this stage, the leaves begin to undergo an aromatic transformation from lightly verdant, to floral, to tropical, and on to sugary stone fruit sweetness. We halted oxidation just as it reached peak tropical profile, killing the green, (stopping the oxidation by heating in rotating drum roasters) to hold these scents and flavors in place. We finished the tea with the most imperceptible of charcoal bakes - just enough to set the leaves, and concentrate the plant’s innate sugars. The result yielded a very small amount of tea - yet the flavor and depth of this experimental green warrant sharing. Above 1000m, plants mature quite slowly allowing sugars to accumulate in the leaves and sweeten the tea, and the unique weather patterns of these alpine gardens with their bright, sunny mornings, increases the development of flavor compounds in the leaves, that are then locked in with the afternoon’s incoming mists and dropping temperatures.\u003c\/p\u003e\n\u003cp\u003eWe don’t usually put much emphasis behind the elevations our teas are grown, choosing instead to focus on the artistry of tea making post-harvest, where skilled craftsman can transform, emphasize, or unearth qualities of sweetness, flavor, and depth through controlled oxidation, firing temperatures, or deep, caramelizing roasts. Minimally crafted teas, however, like greens or green oolongs, maintain their “close to the bush” qualities. In these cases, the onus of great tea making shifts from the craftsman to the garden and gardener.
